Ingredients for vegan jerk bowl
For the vegan Jerk Spiced Tofu:
1 block firm tofu, pressed and cubed
2 tablespoons jerk seasoning
1 tablespoon olive oil
1 tablespoon soy sauce or tamari
For the Coconut Quinoa and Red Beans:
1 cup quinoa, rinsed
1 cup coconut milk
1 cup water
1/2 teaspoon salt
1 can red beans, drained and rinsed
1/2 teaspoon cumin
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
pepper to taste
For the Plantains:
2 ripe plantains, sliced
1 tablespoon coconut oil
For the Veggie Medley with Pineapple:
1 cup peppers and onions, chopped
1 cup greens, chopped
1/4 c shredded carrots
1 cup pineapple, chopped
1 tablespoon olive oil
Salt and pepper to taste
Instructions
Prepare the Jerk Tofu:
Preheat the oven to 400°F (200°C).
In a bowl, toss the tofu cubes with jerk seasoning, olive oil, and soy sauce until well coated.
Spread the tofu on a baking sheet lined with parchment paper.
Bake for 20-25 minutes, flipping halfway through, until tofu is crispy and golden.
Cook the Coconut Quinoa:
In a medium pot, combine quinoa, coconut milk, water, and salt.
Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked and liquid is absorbed.
Fluff with a fork and set aside.
Prepare the Red Beans:
In a small pot, heat the red beans with cumin, smoked paprika, garlic powder, salt, and pepper.
Cook over medium heat until warmed through.
Mix into the quinoa
Cook the Plantains:
In a large skillet, heat coconut oil over medium-high heat.
Add the plantain slices and cook until golden brown and caramelized, about 3-4 minutes per side.
Remove from skillet and set aside.
Make the Veggie Medley with Pineapple:
In the same skillet, heat olive oil over medium-high heat.
Add veggies and pineapple.
Sauté until vegetables are tender and slightly caramelized, about 5-7 minutes.
Season with salt and pepper to taste.
Assemble the Jerk Bowl:
In serving bowls, divide the coconut quinoa and red beans, jerk spiced tofu, and plantains.
Top with the veggie medley with pineapple.
Garnish with fresh herbs like cilantro or parsley if desired.
