Vegan Jerk Bowl Recipe

Ingredients for vegan jerk bowl

For the vegan Jerk Spiced Tofu:

  • 1 block firm tofu, pressed and cubed

  • 2 tablespoons jerk seasoning

  • 1 tablespoon olive oil

  • 1 tablespoon soy sauce or tamari

For the Coconut Quinoa and Red Beans:

  • 1 cup quinoa, rinsed

  • 1 cup coconut milk

  • 1 cup water

  • 1/2 teaspoon salt

  • 1 can red beans, drained and rinsed

  • 1/2 teaspoon cumin

  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon garlic powder

  • pepper to taste

For the Plantains:

  • 2 ripe plantains, sliced

  • 1 tablespoon coconut oil

For the Veggie Medley with Pineapple:

  • 1 cup peppers and onions, chopped

  • 1 cup greens, chopped

  • 1/4 c shredded carrots

  • 1 cup pineapple, chopped

  • 1 tablespoon olive oil

  • Salt and pepper to taste

Instructions

  1. Prepare the Jerk Tofu:

  • Preheat the oven to 400°F (200°C).

  • In a bowl, toss the tofu cubes with jerk seasoning, olive oil, and soy sauce until well coated.

  • Spread the tofu on a baking sheet lined with parchment paper.

  • Bake for 20-25 minutes, flipping halfway through, until tofu is crispy and golden.

  1. Cook the Coconut Quinoa:

  • In a medium pot, combine quinoa, coconut milk, water, and salt.

  • Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked and liquid is absorbed.

  • Fluff with a fork and set aside.

  1. Prepare the Red Beans:

  • In a small pot, heat the red beans with cumin, smoked paprika, garlic powder, salt, and pepper.

  • Cook over medium heat until warmed through.

  • Mix into the quinoa

  1. Cook the Plantains:

  • In a large skillet, heat coconut oil over medium-high heat.

  • Add the plantain slices and cook until golden brown and caramelized, about 3-4 minutes per side.

  • Remove from skillet and set aside.

  1. Make the Veggie Medley with Pineapple:

  • In the same skillet, heat olive oil over medium-high heat.

  • Add veggies and pineapple.

  • Sauté until vegetables are tender and slightly caramelized, about 5-7 minutes.

  • Season with salt and pepper to taste.

  1. Assemble the Jerk Bowl:

  • In serving bowls, divide the coconut quinoa and red beans, jerk spiced tofu, and plantains.

  • Top with the veggie medley with pineapple.

  • Garnish with fresh herbs like cilantro or parsley if desired.
