Looking to get more fish in your life? Try these meatballs made from tuna. I use fresh tuna steaks for this recipe and while you could substitute canned tuna, it will taste more "fishy". You can easily adapt this recipe to different cuisines by changing up the seasonings. For example you could make an Asian spiced version and serve with teriyaki sauce, rice/cauliflower rice and stir fried vegetables, or a Mexican version with mole or enchilada sauce. Ingredients:
1 lb wild tuna steaks
1/3 c almond flour (can sub bread crumbs)
½ c minced onion
Zest of 1 lemon
1 tsp sea salt
1 tsp basil
1 tsp oregano
1 tsp parsley
½ tsp crushed red pepper
Black pepper to taste
1 pastured egg
Olive oil for frying
Directions:
Pulse the tuna in a food processor until the consistency of ground meat. Mix in a bowl with remaining ingredients. Form into meatballs and fry in the olive oil in a skillet over medium heat until browned and done to your liking. Serve with your favorite marinara sauce over spaghetti squash, zoodles, or pasta with a sprinkling of pastured parmesan cheese and a nice salad on the side.
