Here's a tasty recipe for Raw Vegan Peanut Butter Cookie Dough Balls that we served at the 2024 Women's Self Care Escape.
Ingredients:
1 cup rolled oats
1/2 cup natural peanut butter (unsweetened and creamy)
1/4 cup maple syrup
2 tablespoons coconut oil, melted
1 teaspoon real vanilla extract
1/4 teaspoon sea salt
1/3 cup dark chocolate chips or chopped dark chocolate
Instructions:
In a food processor, blend the rolled oats until they form a fine flour-like consistency.
Add peanut butter, maple syrup, melted coconut oil, vanilla extract, and salt to the oat flour in the food processor. Process until a dough-like consistency forms.
Transfer the dough to a mixing bowl and fold in the dairy-free chocolate chips or chopped dark chocolate.
Take small portions of the dough and roll them into bite-sized balls. If the dough is too sticky, you can wet your hands with a bit of water.
Place the peanut butter cookie dough balls on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.
Once chilled, your raw vegan peanut butter cookie dough balls are ready to be enjoyed!
